Uttar Pradesh has launched a new initiative to identify and promote the traditional food heritage of its districts, with the government identifying 208 traditional dishes across the state's 75 districts under its One District One Cuisine (ODOC) scheme.

The initiative aims to give local food traditions a wider platform by connecting them with quality improvement, branding and market access. The government has said the scheme is intended to help traditional flavours gain recognition beyond their immediate geographical markets.

WHAT IS ONE DISTRICT ONE CUISINE?

ODOC was launched by Union Home Minister Amit Shah during the Uttar Pradesh Day celebrations in Lucknow on January 24, 2026. Under the scheme, traditional cuisines and food specialities associated with different districts are being identified and documented for promotion.

The initiative is separate from the One District One Product (ODOP) programme, which covers district-specific products across sectors such as handicrafts, textiles, food processing and other industries.

While the scheme is based on the idea of identifying a distinctive culinary identity for each district, the government has so far identified 208 traditional dishes across 75 districts. The figure does not mean that only one dish has been selected for each district, as several districts have multiple traditional preparations on the list.

FOCUS ON QUALITY, BRANDING AND MARKET ACCESS

ODOC is not limited to documenting traditional dishes. Its framework also focuses on improving quality, developing branding and creating greater market access for local food traditions.

The initiative could provide local food producers and businesses with opportunities to take traditional products to consumers beyond their existing markets. However, the scheme does not guarantee commercial success or higher incomes for individual producers.

Factors such as consumer demand, production capacity, food-safety compliance, quality, packaging and distribution will continue to determine the commercial potential of individual products.

RS 75 CRORE ALLOCATED IN 2026-27 BUDGET

ODOC is a new scheme in the Uttar Pradesh government's 2026-27 Budget, which has allocated Rs 75 crore for its implementation during the financial year.

The allocation is a budgetary provision for the scheme and should not be construed as a direct subsidy or financial assistance of Rs 75 crore to individual food businesses.

The government has positioned ODOC as an initiative to document Uttar Pradesh's diverse food traditions while creating a framework for their wider promotion. By linking traditional cuisines with branding, quality improvement and market access, the scheme seeks to connect local food heritage with broader economic opportunities.
